Erymanthos, Chelmos and Mainalo Mountains (within protected Natura 2000 areas, home to rare and unique flora species).

At altitudes ranging from 800 to 1,800 meters, the Greek Fir (Abies cephalonica) thrives as the dominant tree species from which bees collect the honeydew that gives rise to the renowned Fir Vanilla Honey. Alongside this, bees gather small quantities of nectar and pollen from rare wild herbs growing in the alpine regions, including Mountain Tea (Sideritis), wild mint, wild oregano, dwarf juniper (Juniperus nana), and other native botanical species.

Fir Vanilla Honey is distinguished by its unique and characteristic color. It displays a predominantly light amber to pearly-white hue, enriched with delicate golden reflections that shimmer within the honey.

Its flavor is delicately sweet and never overpowering, with subtle notes reminiscent of butterscotch caramel.

The aroma is delicate and refined, with subtle notes of fir wood complemented by a gentle hint of vanilla.

It is exceptionally thick and rich, featuring a dense, creamy texture and a smooth, velvety mouthfeel.

Due to its naturally low sugar content, Fir Vanilla Honey does not crystallize, allowing it to retain its smooth texture and distinctive appearance over time.
