Here, our bees forage on native thyme varieties along with dozens of aromatic wild shrubs and Mediterranean herbs, creating a honey of exceptional character and complexity. Laconia

Our Thyme Honey, characterized by its exceptionally high pollen content, is produced through a double transhumance process. First, our beehives are placed among the early-blooming thyme fields that grow at low elevations near the sea, within the rugged and rocky landscapes of Laconia. They are then moved to higher-altitude semi-mountainous thyme habitats, where the honey develops an even richer aroma and a more intense flavor profile. Alongside thyme, dozens of aromatic Mediterranean shrubs and wild phrygana bloom during the same period, contributing additional complexity and distinctive character to this exceptional honey.

Thyme Honey is renowned for its distinctive appearance. It typically exhibits a bright golden hue and a light amber color, reflecting its purity and floral origin. Depending on the harvest season and the specific foraging area, its color may range from light golden blond to deeper amber-orange tones, particularly when influenced by the nectar of other aromatic Mediterranean herbs.

Thyme Honey is renowned for its rich, intensely aromatic, and full-bodied flavor. It delivers a long-lasting finish, often accompanied by a pleasant warming sensation in the throat, attributed to its naturally high content of enzymes and essential oils.

Thyme Honey is distinguished by its intense and penetrating aroma, strongly reminiscent of fresh thyme blossoms. Rich, expressive, and unmistakably Mediterranean, it is widely regarded as one of the most aromatic honeys produced by the Greek landscape.

Thyme Honey features a medium to thick consistency and dissolves slowly on the palate, gradually releasing its full spectrum of aromas and flavors.

Thyme Honey crystallizes at a moderate rate and typically remains liquid for 6 to 10 months, depending on storage conditions and its natural composition.
