& Fir Honey

This distinctive summer honey is produced through a double seasonal migration of our bee colonies. The hives are first placed in the heather fields and later moved to the fir forests of mountainous Achaia, allowing the bees to gather nectar and honeydew from two exceptional botanical sources. The result is a unique honey that combines the finest characteristics of both varieties, creating a perfectly balanced flavor profile in which each complements and enhances the other.

HARVESTING LOCATION:

Mountainous and Semi-Mountainous Achaia, Peloponnese, Greece

Our bee colonies are first placed in semi-mountainous heather habitats at elevations of 500–800 meters, where they begin collecting nectar from the autumn-blooming heather. Due to the short duration of this flowering period, the honey is not harvested at this stage. The hives are then transferred to the fir forests of Achaia at elevations above 800 meters, where the bees complete the production of this rare honey. The result is a unique combination of heather nectar and fir honeydew, bringing together the finest characteristics of both botanical sources.

Heather & Fir Honey displays a light reddish to copper-colored appearance, with its exact shade varying according to the proportion of heather nectar present in the final blend.

Heather & Fir Honey offers a rich, full-bodied flavor with a distinctive lingering finish reminiscent of bitter almond and subtle bittersweet notes. Less sweet than pure blossom honeys, it beautifully combines the characteristic bitterness of heather with the depth and smoothness of fir honey.

Heather & Fir Honey is characterized by an intense and distinctive aroma, combining the freshness of the forest with the floral notes of blooming heather.

Heather & Fir Honey is distinguished by its dense, rich, and viscous texture. The combination of naturally thick fir honey with aromatic heather nectar enhances its stability and body, creating a remarkably satisfying mouthfeel. As crystallization begins, it often develops a smooth, creamy consistency, while the heather component may contribute a subtle granular texture.

While fir honey naturally crystallizes very slowly, the presence of heather nectar—known for its rapid crystallization, often within 1–3 months—accelerates the process. As a result, Heather & Fir Honey gradually develops a pleasantly creamy texture while retaining its distinctive character and quality.
