Organic Pine Honey

Our Organic Pine Honey is harvested in Northern Evia (Euboea), within a pristine and unspoiled natural environment. Considered one of Greece’s most treasured honey varieties, it combines exceptional nutritional value with the distinctive aromas of the Mediterranean pine forest. The unique interaction between the mountainous landscape and the sea breezes of the Evia Gulf and the Aegean Sea creates ideal humidity conditions for the development of Marchalina hellenica—commonly known as the “pine honey insect”—which is responsible for the honeydew secretions from which this honey is produced. The surrounding pine forests coexist with a rich diversity of wild herbs and native flowers, contributing additional layers of aromatic complexity and character.

The mountains of Northern Evia (Pagondas, Dafnousa and Prokopi), Greece

At elevations ranging from 500 to 1,000 meters, the Aleppo Pine (Pinus halepensis) dominates the landscape and serves as the primary source of our Organic Pine Honey. Through the activity of Marchalina hellenica—commonly known as the “pine honey insect” and responsible for the production of honeydew secretions—bees collect the valuable honeydew that gives Pine Honey its distinctive character. At the same time, they gather nectar and pollen from native plants that bloom alongside the pine honey flow, including ivy, strawberry tree (Arbutus), blackberry bramble, heather, and a variety of Mediterranean shrubs and wild herbs.

Pine Honey is characterized by its deep amber color, which varies according to the harvest season. Autumn-harvested Pine Honey is typically darker and richer in appearance than the honey collected during the summer months.

Organic Pine Honey is distinguished by its gentle, refined sweetness, allowing the characteristic woody aromas of the pine forest and subtle resinous notes to take center stage.

Pine Honey is characterized by a distinctive, slightly spicy aroma, with notes reminiscent of pine wood and natural resin, reflecting its unique forest origin.

As a honeydew honey, Pine Honey is distinguished by its rich, full-bodied, and smooth texture, offering a refreshing mouthfeel and remarkable depth.

The crystallization of Pine Honey depends on the harvest season and the presence of complementary floral sources that contribute nectar during the honey flow.
